Winestone, a restaurant located within the Mercure Singapore on Stevens hotel, has refreshed its offering with an expanded menu, introducing a broader selection of dishes alongside new weekend dining concepts.

The updated menu, now spanning over 40 dishes, is built on a European foundation with local influences, and designed around a sharing format suited to group dining and social occasions. Weekend offerings such as curated platters and brunch formats further extend the concept beyond its regular à la carte service.

Unlike many hotel dining concepts operated by external F&B groups, Winestone is run directly by the hotel. This allows for a more integrated approach across its menu, wine programme and overall positioning.

Located within the verdant Stevens enclave, the space is conceived as a cosy, all-day dining venue that transitions easily from casual daytime meals to elegant evening soirées.



A contemporary setting

The interiors are defined by clean lines and an open layout. Floor-to-ceiling windows run along one side, bringing in natural light and views of the surrounding greenery.

A long bar anchors the space, next to a mix of dining tables and lounge seating. Warm pendant lighting softens the room, while the overall palette remains neutral and understated.

A curated wine offering

Alongside the refreshed menu, Winestone continues to anchor its offering around a curated selection of organic and bespoke wines.

The collection spans Old and New World labels, with over 20 premium wines across reds, whites, rosés and sparkling styles.

A key focus is on organic wines, produced with minimal intervention to preserve the natural expression of the grape and terroir. These sit alongside bespoke labels selected for their distinct profiles and relative rarity, offering a range that balances familiarity with less commonly seen bottles.

Highlights from the wine selection

The range includes sparkling wines such as Taittinger Brut Réserve, a Champagne with fine bubbles and notes of citrus and brioche, and Silterra Prosecco Brut NV, which offers a lighter, fruit-driven profile with a crisp finish.

Rosé options include Château Les Valentines “L’Effrontée”, a pale Provence rosé with red berry notes and a clean, mineral edge, as well as Ministry of Clouds McLaren Vale Rosé, which shows a slightly fuller expression with red fruit and subtle citrus notes.

For a richer style, the Anton Bauer Eiswein Grüner Veltliner stands out as a dessert wine, with concentrated honeyed fruit balanced by bright acidity.
