Last Minute Stay-At-Home Valentine's Day Dinner Ideas

With Valentine’s day falling on a Thursday in 2019 and it is a working day, here are some fast recipes you can prepare at home under 1 hour for your partner. You may pick either 1 from each category.

Appetizers

1. Caprese Salad - 10 mins




Ingredients: Love, 1 tomato, 1 mozzarella cheese, fresh basil leaves (garnishing), extra virgin olive oil (drizzling), salt and black pepper


Instructions: Cut the tomato and mozzarella cheese into 5 slices. Place it on a plate. Add some olive oil and sprinkle some salt and pepper. Place the basil on top as garnishing. Serve


2. Nachos Platter - 10 mins


Ingredients: Love, guacamole (1 tomato, ½ onions, 2 avocados, ½ tsp. salt, ½ tsp. pepper & 1 tsp. lime/lemon) and nachos

Instructions:

Preparing the guacamole: Cut the tomato. Then, chop your onions into small cubes and mash the avocados. Add all the ingredients into a bowl and mix. Serve.

Preparing Nachos: Place the nachos into a bowl or board. Serve.

Main Course

3. Aglio-Oglio - 15 mins

Ingredients: Love, 7 oz dry spaghetti, 2 Tbsp. extra virgin olive oil, 5 cloves garlic (thinly sliced), 1 small onion (chopped), ¼ cup chicken or veggie broth, ¼ cup parsley (chopped), ½ cup parmesan cheese (grated), kosher salt, black pepper and mussels

Instructions: Cook spaghetti until al dente. While the pasta is cooking, heat the olive oil in large skillet until the oil is hot. Then, add the garlic and onion and stir-fry it for 2 mins. Add the mussels and stir-fry for another 4 mins. Next, add the cooked spaghetti and add some broth to loosen pasta as needed. Add parmesan cheese, kosher salt and black pepper as needed and mixed it well. Lastly, garnish it with some chopped parsley. Serve.

4. Filet Mignon - 30 mins

Ingredients: Love, 2 (6 oz) beef tenderloin filet mignon steaks (room temperature), olive oil, kosher salt, black pepper and 2 garlic cloves

Instructions: Preheat the oven to 400°F. Next, coat the steak with olive oil, then season both sides with kosher salt and black pepper. Heat the skillet over high heat then add the steaks and cook it for 2 mins. Turn over and cook for an additional 2 mins. Sear the sides of the steaks for about 1 min till it browned. Place the steaks in the oven for about 3 to 4 mins, then check them with a meat thermometer. Remove from oven when the steaks read 125° F for Medium-Rare or 130° F for Medium. Let them rest 5 to 10 mins before serving.

Desserts

5. Cinnamon Roll Mug Cake - 6 mins

Ingredients: Love, ¼ cup flour/pancake mix, ¼ tsp. baking powder, 2 Tbsp. full cream milk, 1 Tbsp. maple syrup, ¼ tsp. vanilla extract, 1 tsp. coconut oil, 1 Tbsp. brown sugar/coconut sugar and ¼ tsp. ground cinnamon

Instructions: Combine all ingredients in a mug then whisk together with a fork until it is smooth. Microwave mixture on high power for 1 min then check the cake. If it is not fully cooked, microwave for an additional 15 secs. Serve.

6. Chocolate fondue - 5 mins

Ingredients: Love, fruits of your choice, 2 bars of milk chocolate (3.5 oz), 3 ounces of semi-sweet chocolate, ½ cup of full cream and ¼ tsp. sea salt

Instructions: Chop the chocolates into smaller pieces. Add a pinch of sea salt, milk chocolate, semi-sweet chocolate and the full cream into a bowl. Then heat it up in a microwave for 30 secs at medium (50 per cent) power. Stir the mixture until it is smooth. If the chocolate hasn't melted completely, microwave it for another 15 secs. Dip your fruits. Serve.


Drinks

7. Mojito - 5 mins


Ingredients: Love, 4 to 5 mint leaves, 2 ounces lime juice (freshly squeezed), 1 tsp. powdered sugar/syrup, 2 ounces rum, 2 cans of club soda (carbonated water), lime wedges or mint sprig (garnishing) and ice

Instructions: Break the mint leaves into smaller pieces to release its aroma. Add the mint leaves, sugar/syrup and freshly squeezed lime juice and stir. Add the ice. Garnish with mint sprig or lime wedge. Enjoy.

8. Raspberry Limoncello Prosecco - 5 mins

Ingredients: Love, 3 cups prosecco (chilled), 1 cup limoncello liqueur (chilled), 1 cup frozen raspberries and 6 sprigs fresh mint

Instructions: Mix and whisk prosecco and limoncello in a large pitcher. Add raspberries and garnished it with mint. Serve.
